Greek Couscous Salad with Lemon Dressing

3 cups cooked couscous
1 large cucumber, peeled, diced
2 medium tomatoes, diced
2 celery stalks, chopped
3 green onions, chopped
1/4 cup parsley, chopped
1 medium lemon, juiced
2 tablespoons Dijon mustard
1 garlic clove, grated
2 tablespoons balsamic vinegar
1/4 cup olive oil
3 oz. feta cheese, crumbled (optional)
No Salt Seasoning and Pepper, to taste
