Wedge Salad Bites

1 large tomato, chopped into 16 bite size pieces

Small skewers or toothpicks

1/2 iceberg lettuce, cut into 8 small wedges

4 strips bacon, cooked, cut in half

1/4 cup blue cheese dressing

1/3 cup crumbled blue cheese

Salt and Pepper, to taste

Season the tomato pieces with salt and pepper. For each “bite”, using the skewers or toothpicks, thread a small lettuce wedge, a half bacon piece and 2 tomato pieces. Place the “bites” on a plate or platter. Drizzle blue cheese dressing over the top. Add crumbled blue cheese on top of each. Serve immediately.
