Ham and Cheese “Muffins”

3/4 cup ham, cooked, cubed

1 cup cheddar or Monterey Jack cheese, shredded

8 large eggs

2 tablespoons milk

1 teaspoon dried basil

1 tablespoon hot sauce (optional)

Salt and Pepper, to taste

Preheat oven to 375°.

Grease 8 muffin cups in a 12 tin muffin pan. Divide ham and cheese amongst the eight greased cup. In a large bowl, whisk the eggs, milk, basil, hot sauce. If using, salt and pepper. Top each filled muffin tin with egg mixture, filling cups three-fourths full.

Bake 22-25 minutes or until a knife inserted near the center comes out clean. Serve immediately.
