Pasta Spinach Salad

1 lb. pasta, any kind

3 cups fresh spinach, chopped

1 large tomato, chopped

2 celery stalks, chopped

3 hard boiled eggs, peeled, chopped

4-5 pieces cooked bacon, crumbled (optional)

1 clove garlic, grated

3 tablespoons apple cider vinegar

2 tablespoons Dijon mustard

2 teaspoon honey

1/3 cup olive oil

10-12 fresh basil leaves, torn

Salt and Pepper, to taste

Cook pasta according to package directions. Drain; add salt. Let cool.

In a large serving bowl, mix together the spinach, tomato, celery, eggs and bacon. In a small bowl, whisk together the garlic, vinegar, mustard, honey, oil, salt and pepper. Pour over the pasta mixture. Garnish with fresh basil.
