2 medium size acorn squash
3 tablespoons olive oil, divided
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup plain yogurt or non-fat sour cream (optional)
No Salt Seasoning and Pepper
Preheat oven to 400 degrees.
Slice squash in half. Remove seeds. Brush half of the oil over the squash. Season with no salt seasoning and pepper. On a large baking sheet, place the squash side face down.
Bake for 30-40 minutes or until the skin is easy to pierce with a fork and the flesh is soft. Scoop out the flesh of the squash. Place in a medium bowl. Add remaining oil, sugar, cinnamon, nutmeg, yogurt or sour cream, if using, no salt seasoning and pepper. Mix well. Serve immediately.
