Spanish Rice and Beef

1 lb. ground beef

2 tablespoons canola oil

1 small yellow onion, diced

3 garlic cloves, diced

3/4 cup uncooked white rice

1 teaspoon cumin

1/2 teaspoon oregano

1 tablespoon chili powder

1/2 cup water

1 can (14.5 oz.) diced tomatoes

1 can (10 oz.) diced tomatoes with green chilies

Salt and Pepper, to taste

In a large skillet up to medium high heat, brown ground beef with salt and pepper. Drain; remove from pan.

In the same skillet, add canola oil. Saute the onions for 3-4 minutes with salt and pepper. Add garlic and rice. Saute for an additional 2-3 minutes over medium heat.

Add ground beef back to the pan with the cumin, oregano, chili powder, water, tomatoes and green chili oregano, chili powder, cumin, salt, black pepper, water, and tomatoes. Bring to a boil; cover and reduce to a simmer for 20-25 minutes or until all liquid is absorbed. Serve immediately.
