Mini Bacon-Wrapped Meatloaves

  • 1 tablespoon canola oil
  • 1 small white onion, diced
  • 3 garlic cloves, grated
  • 1/2 cup carrots, diced
  • 2 lbs. lean ground beef
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon mustard
  • 1/2 cup breadcrumbs
  • 2 eggs, lightly beaten
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 12 slices thin-cut bacon
  • Salt and Pepper, to taste

Preheat oven to 375 degrees F.

In a skillet up to medium high heat, add the oil. Saute the onion, garlic and carrots for 3-4 minutes. Let cool. In a large bowl, mix together the onion mixture, ground beef and the next 5 ingredients through breadcrumbs with salt and pepper.

Divide meatloaf mixture into 6 mini meatloaves. Place on baking sheet. In a small bowl, mix together the ketchup and brown sugar. Cut 6 pieces of the bacon in half. Wrap a piece of the bacon around each mini meatloaf.  Spoon some of the ketchup mixture over each loaf. Place one of the half pieces of bacon over the top. Bake for 30-35 minutes, until the bacon and meat are cooked all the way through.
