Country Style Ribs with an Orange BBQ Sauce (04.14.16)

  • 3 lbs. country style ribs
  • 1 tablespoon olive oil
  • 1/2 cup diced onion (yellow or white)
  • 2 teaspoons minced garlic
  • 1 pinch ground cinnamon
  • 1 tablespoon chili powder
  • 1 cup orange juice
  • 1 cup ketchup
  • 2 tablespoons molasses
  • 1/4 teaspoon liquid smoke
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • Salt and Pepper, to taste

Put oven rack in middle position and preheat oven to 350°F.

Put ribs in a 6- to 8-quart pot and cover with water by two inches. Bring to a boil, reduce heat and simmer, uncovered, skimming froth, 30 minutes.

Heat olive oil in medium-sized saucepan. Add onion and garlic and sauté until onions are translucent. Add cloves, cinnamon, chili powder and orange juice to saucepan and bring to a boil.  Add remaining ingredients and simmer until sauce thickens, 5-10 minutes.

Drain pork; pat dry. Place ribs in a foil lined 13 x9-inch baking dish. Pour sauce (reserving 1/2 cup) over pork to coat evenly; cover tightly with foil. Bake 1 hour. Remove foil, turn ribs over and cook, uncovered, for an additional 25-30 minutes or until very tender. Serve with remaining sauce.
