Roast Beef and Pasta Salad (03.22.16)

  • 12 oz. pasta, any kind
  • 10 oz. roast beef, cooked, diced
  • 2 stalks celery, diced
  • 1 cup tomato, diced
  • 1 small onion, any kind, diced
  • 1 bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Zest and juice of one lime
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon mustard
  • 1 teaspoon ground cumin
  • 1 teaspoon dried basil
  • 1/3 cup olive oil
  • Salt and Pepper, to taste

Cook the noodles according to the package directions. Drain; let cool.

In a large bowl combine pasta, beef, celery, tomatoes, onions, bell pepper and cilantro. In a medium bowl, whisk together lime zest and juice, vinegar, honey or sugar, mustard, cumin, basil, olive oil, salt and pepper. Pour dressing over the steak and pasta. Mix together until all of the ingredients are well coated. For the best flavor, cover and chill in the refrigerator for 2 hours. Stir before serving.
