- 3 cups rigatoni pasta
- 1 pound ground beef
- 1 pound broccoli florets
- 3 tablespoon olive oil
- 1/4 cup onions, diced
- 3 cloves garlic, minced
- 1/4 cup shredded Parmesan cheese
- Salt & Pepper to taste
Cook pasta according to package directions. Add broccoli; continue cooking 3 to 4 minutes or until pasta and broccoli are tender. Drain well.
Heat a large nonstick skillet up to medium high heat. Brown ground beef until crumbled. Remove from skillet with slotted spoon; pour off drippings.
Heat oil in same skillet over medium heat. Add shallots and garlic; cook 3 to 4 minutes or until tender, stirring frequently. Remove from heat. Add beef; toss to mix. Season with salt and pepper, to taste. Combine beef mixture with pasta and broccoli in large bowl; toss well. Sprinkle with cheese. Serve immediately.
