Healthy No Bake Cookies (09.02.15)

  • 1 cup almond butter
  • 3/4 cup honey
  • 1/2 cup canola oil
  • 2 teaspoons vanilla
  • 2 1/4 cups quick oats
  • 6 tablespoons cocoa powder

In a saucepan, combine first three ingredients. Cook on the stovetop over low heat until the canola oil melts and the peanut butter softens, 4-5 minutes. Add the vanilla, oatmeal, and cocoa; stir well.

Drop in 1-2 tablespoon measurements onto a baking sheet lined with wax paper. Flatten into a round cookie or form balls. Let cool; store in an airtight container in the refrigerator.
