Recipe: Spinach Avocado Salad with Sweet Toasted Pecans (12.03.14)

For the poppy seed dressing:

3 tablespoons lemon juice

3 tablespoons lime juice

1 teaspoon Dijon mustard

2 tablespoons mayonnaise

3 tablespoons honey

1/3 extra virgin olive oil

1½ teaspoon poppy seeds

Salt and Pepper to taste

For the salad:

5 cups of baby spinach

1 large avocado, diced

1/3 cup Sir Walter’s Candy Sweet Toasted Pecans

1 can pineapple chunks, drained

1/4 cup red onions, thinly sliced

2 roasted red pepper strips, (jarred) chopped

1/4 cup feta cheese, crumbled (Alt: blue cheese or goat cheese)

In a medium bowl, whisk together the lemon, lime, dijon mustard, mayonnaise and honey. Drizzle in the olive oil. Add the poppy seeds, salt and pepper. Set aside.

Toss all the salad ingredients together in a large bowl, until combined. Pour desired amount of dressing overtop and serve immediately.
