Harmon’s chef shares seasonal recipes

Chef Johnny McAdams from Harmon's spent Sunday morning in the FOX 13 Cafe making pumpkin spice waffles and cinnamon sugar syrup.

Pumpkin Spice Waffles

2 1/2 C. all-purpose flour

1/3 C. packed light brown sugar

2 1/4 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

2 tsp. ground cinnamon

1 tsp. ground ginger

1/4 tsp. ground cloves

4 eggs

1 C. whole milk

1 C. well-shaken buttermilk

1 C. canned solid-pack pumpkin

Vegetable oil for waffle iron

Combine all the items into a large mixing bowl. Mix until the batter is smooth. Preheat a waffle iron on high heat then turn down to medium heat. Oil the iron with a small amount of oil, add ½ C. of waffle mix to the iron and cook until your desired doneness. 4 to 6 minutes for a light color or 8 to 10 for a dark and crispy finish.

Cinnamon Sugar Syrup

1 C. sugar

1 C. brown sugar

1 Tbs. cinnamon

¼ tsp. clove

¼ tsp. all spice

2 Tbs. butter

1 ½ C. water

Combine all the items into a small sauce pan over medium heat. Bring the syrup to a boil, allow the syrup to boil for 6 to 8 minutes. Turn the heat to low and allow the syrup to reduce and thicken. Once the syrup has thickened (place a spoon into the sauce if it coats the spoon and doesn’t run off the spoon quickly) remove the pan from the heat and add the butter, stir until the butter has melted completely. Allow the syrup to cool before serving.
