Warm Spring Berries with Agave Syrup (05.21.12)

  •  2 C assorted berries (strawberry, raspberry, blackberry, Etc.)
  • 1/3 C Agave syrup
  •  2/3 C water
  • Fresh Mint Sprigs
  • 1Cinnamon Stick

Place agave, water and cinnamon in a small saucepan and bring to a boil. Remove from heat and allow to cool slightly. While syrup is heating, clean berries and place into a mixing bowl. Add 6-8 mint leaves to fruit and pour syrup over top. Mix gently and serve immediately over ice cream, ladyfinger cookies or use as a topping for sponge cake.
