Taco Tater Tot Casserole

Smith's Chef Jeff Jackson joined us from his kitchen with a recipe the whole family will devour!

Taco Tater Tot Casserole

Ingredients
1 lb. ground beef
1 small onion, chopped
1 tsp. garlic, minced
4 oz. can diced green chiles
15 oz. can black beans, drained and rinsed
1 taco seasoning packet
½ c. salsa
2 c. frozen sweet corn
3 c. shredded cheese
28 oz. frozen tater tots
10 oz. can red enchilada sauce
Salt and pepper to taste
Cilantro, sour cream, avocado, and tomato for garnish

Directions
1. Preheat your oven to 375. Add a little oil to a large saute pan and add the onion and ground beef. Crumble the ground beef as it browns. Season the meat with a little salt and pepper. Once the meat is browned, add the garlic and cook another minute. Drain the excess fat.
2. Add the green chiles, taco seasoning mix, salsa, black beans, corn and half of the cheese. Stir to combine. Pour it into a 9x13 baking dish.
3. Arrange the tater tots over the top in a single layer. Pour the enchilada sauce evenly over the casserole. Bake uncovered for 30-40 minutes or until the tater tots begin to brown and crisp.
4. Remove it from the oven and sprinkle the rest of the cheese over the top. Put it back in the oven until the cheese melts. Serve warm garnished as you like.
