Here's a recipe all dads would love on Father's Day.
Chef Jeff Jackson from Smith's shows us how to prepare Father's Day Reverse Seared Steaks.
Ingredients
1 thick steak (1.5 inches or more)
2 tbsp. black pepper
2 tbsp. kosher salt
2 tbsp. paprika
1 tsp. red pepper flake
1 tbsp. garlic powder
1 tbsp. onion powder
1 tsp. sugar
Digital meat thermometer is a must
Directions
1. Preheat your oven to 275. Let the steak sit at room temp for 1 hour prior to cooking. Make the rub by mixing all the ingredients together in a bowl. Season the meat generously on both sides.
2. Place the meat on a rack on a sheet pan. Place in the oven and cook 45-60 minutes or until the thermometer reaches 115-120 for rare and then 5-7 degrees more for each stage of doneness you prefer. This could also be done in a pellet smoker if you own one. Remove from the oven and let rest while you preheat your cooking device.
3. Preheat your grill to its highest setting or a cast-iron skillet over high heat. Place the steak on the hot grill or your pan with a little canola oil. I feel the cast iron works best, but the grill is fine too. Just make sure it`s smoking hot. Sear the steaks for about 1 minute per side or until they have formed a nice crust. Serve immediately.
