Smith's Chef Jeff Jackson shared a recipe for Creamy Lemon Chicken Noodle Soup, the ultimate comfort food with a lemony twist!
Ingredients
1 tbsp. olive oil
1 small onion, diced
2 carrots, diced
2 stalks celery, diced
1 tbsp. garlic, minced
2 qt. chicken stock or broth
2 c. shredded, cooked chicken
2 tsp. fresh thyme leaves
1 bay leaf
8 oz. egg noodles
¾ c. heavy cream
2 lemons, juiced and zested
Salt and pepper to taste
Directions
1. Add the oil to a pot over med-high heat. Add the onion and saute 4-5 minutes stirring often. Add the carrots, celery, garlic, bay leaf, thyme, and lemon zest and cook another 4-5 minutes. Add the chicken broth or stock and bring to a simmer and cook 8-10 minutes to soften the veggies.
2. Add the noodles and simmer 7-8 more minutes. Add the heavy cream, lemon juice, and chicken and cook 2-3 more minutes or until the chicken is warmed through. Taste and adjust the seasoning as desired. Serve and enjoy!
