Sunday Brunch: Cinnamon Apple Bread with Vanilla Glaze

Ingredients

For the Bread

  • 1 Granny Smith apple, peeled and finely chopped
  • ½ tsp. kosher salt
  • 1 ½ tsp. baking powder
  • 1 ½ c. flour
  • 1 stick butter, softened
  • 1 c. brown sugar
  • ¼ c. sugar
  • 2 tsp. cinnamon
  • 2 eggs
  • 1 tbsp. vanilla
  • ½ c. milk

For the Glaze

  • 1 tbsp. butter, melted
  • ½ c. powdered sugar
  • 1 tbsp. milk
  • ½ tsp. vanilla

Directions

  1. Preheat your oven to 350.
  2. Spray a 9x5 inch loaf pan with non-stick spray, and then line it over the long sides and bottom with a piece of parchment paper to make it easy to remove from the pan later.
  3. In a mixing bowl, whisk together the salt, baking powder, and flour.
  4. In another mixing bowl, using a hand mixer mix the butter with the two sugars and cinnamon until creamy.
  5. Mix in the eggs one at a time. Once combined, mix in the milk, apples, and vanilla.
  6. Add half of the flour mixture to the milk mixture and mix until combined. Add the rest of the flour mixture and mix to combine.
  7. Put the batter in the pan and even out with a spatula. Place in the oven and bake 50-55 or until golden brown and a toothpick inserted comes out clean. Cool in the pan for 10 minutes and then carefully remove the loaf from the pan and cool on a wire rack.
  8. As the loaf cools, make the glaze by whisking together the melted butter, powdered sugar, milk and vanilla in a bowl until smooth. Drizzle the glaze over the loaf, slice and enjoy!
