Sunday Brunch: Breakfast Apple Crisp

Ingredients

For the Topping

  • 6 tbsp. butter, melted
  • ¼ c. maple syrup
  • ¼ c. milk
  • ½ c. all-purpose flour
  • 2 c. old fashioned oats
  • 1/3 c. pecans, chopped
  • ¼ c. unsweetened coconut
  • Maple syrup and vanilla yogurt for serving

For the Filling

  • 3 lbs. apples, cored and thinly sliced
  • ¼ c. orange juice
  • ¼ c. maple syrup
  • 3 tbsp. cornstarch
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg

Directions

  1. Preheat your oven to 375. Spray a 9x13 baking dish with non-stick spray.
  2. In a large mixing bowl, combine and mix the filling ingredients until combined.
  3. Transfer the mixture to the baking dish.
  4. To the same bowl, add the maple syrup and milk and whisk to combine.
  5. Whisk in the melted butter.
  6. In a separate mixing bowl, combine the flour, oats, pecans, and coconut.
  7. Add to the butter mixture and stir to combine.
  8. Pour the mixture over the apples in the baking dish and place in the oven to bake for 55-65 minutes or until the topping is a light golden brown.
  9. Serve warm topped with the yogurt and a drizzle of maple syrup.
