Ingredients
For the Flatbread:
- 2 c. flour
- 1 ½ tsp. baking powder
- 1 tsp. kosher salt
- 2 tbsp. olive oil
- 1 tsp. sugar
- ¾ c. cold water
- Oil for cooking
For the Pizza:
- 3 c. shredded mozzarella
- 1 ½ c. pizza sauce
- favorite pizza toppings
Directions
In a large mixing bowl, whisk the flour, baking powder, sugar, and salt together until well blended. Make a well in the center of the flour mixture and add most of the water, saving a couple of tbsp. for later.
Using a rubber spatula, stir until a dough starts to form. If it seems too dry, just add a little more of the reserved water. When the dough comes together, transfer it to a floured working surface. Knead 5-10 times or until the dough is smooth. Cover with a clean towel and let it rest for 10 minutes.
Divide the dough into 6 equal pieces. Dust each with a little flour and roll into a disk that is about ¼ inch thick (not too thin).
Heat a skillet over med-high heat and add one or two tbsp. of cooking oil. Once the oil is hot, add one of the flatbreads and cook about two minutes per side or until golden brown. Remove from the pan and place on a plate while you repeat the process and cook the others.
Preheat your oven to 450. Top each flatbread with about ¼ c. of pizza sauce, ½ c. shredded mozzarella and your favorite pizza toppings. Place the pizza on a parchment covered sheet pan and place in the oven for 8-12 minutes or until the cheese is melty and beginning to brown. Enjoy!
