Greek Beef Skillet
1 1/2 lbs. ground beef
1 small white onion, chopped
1 small green pepper, seeded, chopped
2 cloves garlic, diced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 cup beef stock
1/4 cup green, black or kalamata olives, sliced
2 cups loosely packed spinach
4 oz. feta cheese, crumbled
Salt and Pepper, to taste
In a large skillet or Dutch oven up to medium-high heat, cook beef, onion and pepper with salt and pepper for 5-6 minutes until vegetables soften and beef is browned. Add garlic; cook another 1-2 minutes. Drain. Add oregano, basil, parsley, beef stock and olives. Cook over medium heat for 4-5 minutes. Remove from heat. Stir in the spinach and feta. Serve immediately.
