Kale, Mango and Avocado Salad

  • 1 lemon, juice only
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • 2 large bunches kale, center rib discarded, chopped
  • 2 large mangos, peeled, seed removed, chopped
  • 2 large avocados, diced
  • 1/4 cup walnuts or almonds, chopped
  • Salt and Pepper, to taste

In a large serving bowl, whisk together the lemon juice, vinegar, honey, mustard, olive oil, salt and pepper. Add the kale, mango, avocados and nuts. Mix well. Serve immediately.
