- 1 lemon, juice only
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil
- 2 large bunches kale, center rib discarded, chopped
- 2 large mangos, peeled, seed removed, chopped
- 2 large avocados, diced
- 1/4 cup walnuts or almonds, chopped
- Salt and Pepper, to taste
In a large serving bowl, whisk together the lemon juice, vinegar, honey, mustard, olive oil, salt and pepper. Add the kale, mango, avocados and nuts. Mix well. Serve immediately.
