2 lbs. small red potatoes, quartered
3 tablespoons butter
1/2 cup milk
1/2 cup sour cream
1 cup gouda cheese, shredded
4 bacon slices, cooked, crumbled
6 green onions, diced (optional)
Salt and Pepper, to taste
Place quartered red potatoes in a large saucepan; cover with cold water. Bring to a boil. Reduce heat to medium. Cook for 10-12 minutes until tender. Drain well; return potatoes to pan over medium-low heat. Add butter, milk, salt and pepper; mash potato mixture with a potato masher to desired consistency. Add sour cream. Cook over medium heat for 2-3 minutes, stirring constantly. Remove from heat. Add cheese; stir until cheese melts. Top with bacon and green onions, if using. Serve immediately.
