6 hard-cooked eggs, peeled
1 green onion, diced
1 small Serrano pepper, diced
1/4 green bell pepper, diced
2 tablespoons cilantro, chopped
1/2 teaspoon chili powder
1/4 cup mayonnaise or Greek yogurt
2 tablespoons Dijon mustard
1/2 teaspoon hot sauce
1/4 cup Mexican blend cheese, shredded
Salt and Pepper, to taste
Cut eggs in half crosswise. Remove yolks from cooked egg. In a medium mixing bowl, mash the yolks. Add the green onions and the next 7 ingredients through the cheese. Add salt and pepper, to taste.
Spoon yolk mixture into egg white halves. For best flavor, let eggs set up in refrigerator for 1-2 hours.
