Mini Turkey and Black Bean Tacos

  • 1 teaspoon olive oil
  • 1 lb. lean ground turkey
  • 1 small white onion, chopped
  • 1 tablespoon chili powder
  • 1 1teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 (15-ounce) can no-salt added black beans, rinsed and drained
  • 1 cup fresh or previously frozen corn kernels
  • 1 cup prepared salsa
  • 18 mini corn tortillas, warmed
  • No Salt Seasoning and Pepper, to taste

Toppings:

  • Shredded Lettuce
  • Diced Tomatoes
  • Prepared Salsa
  • Non-Fat Sour Cream or Plain Greek Yogurt
  • Chopped Cilantro

In a large skillet up to medium-high heat, add oil, turkey, onion, chili powder, cumin, garlic powder, no salt seasoning and pepper. Cook, stirring frequently, for 6-8 minutes or until the turkey is cooked all the way through. Mix in the beans, corn and salsa to the pan. Reduce heat to medium-low. Cook for an additional 8-10 minutes.

Serve turkey and bean mixture in the corn tortillas with desired toppings.
