Summer Strawberry and Peach Salad with Feta Cheese
- 4 cups baby spinach
- 2 cups strawberries, sliced
- 2 peaches, seed removed, chopped
- 1/4 red onion, chopped
- 2 celery stalks, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup balsamic vinegar
- 2 tablespoons strawberry preserves
- 1 tablespoon Dijon mustard
- 1/3 cup olive oil
- Salt and Pepper, to taste
Place the first 6 items (through feta cheese) in a large serving bowl. In a small bowl, mix together the vinegar, preserves, mustard, oil, salt and pepper. Pour desired amount of dressing over salad. Serve immediately.
