Fried Egg Burgers

  • 1 lb. ground beef, formed into 4 patties
  • 4 hamburger rolls, split
  • 2 tablespoons olive oil
  • 4 Monterey Jack or cheddar cheese slices
  • 4 large eggs
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 4 tomato slices
  • 4 lettuce leaves
  • 4 red onion round slices
  • Salt and Pepper, to taste

Preheat oven to 400 degrees F.

Season patties with salt and pepper to taste. Grill or pan fry patties to desired doneness; keep warm.

Brush cut side of buns with oil. Lay on a baking sheet. Place one slice of cheese per bun. Bake for 4-5 minutes or until cheese melts.

Pan fry eggs over medium heat in a greased skillet until whites are set. Turn eggs over if desired, for additional firmness of yolks.

To serve, mix mayonnaise and ketchup together. Brush on cut side of buns without the cheese. On cheese side of buns, top with tomato slices, lettuce and onion slices, then a burger. Top the burger with fried eggs. Cover with bun top. Serve immediately.
