Salsa
2 cups cantaloupe, chopped
1/2 jalapeño pepper, seeded and diced
1/4 red onion, diced
1/4 cup cilantro, chopped
1 lime, juiced
No Salt Seasoning and Pepper, to taste
Tacos
1 tablespoon olive oil
1 lb. lean ground turkey
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1 lime, juice and zest
12 corn or whole wheat tortillas, warmed
1 cup plain Greek yogurt or non-fat sour cream (optional)
No Salt Seasoning and Pepper, to taste
Combine all of the ingredients for the salsa in a bowl. Cover and refrigerate while making the tacos.
Bring a large skillet up to medium-high heat; add oil. Add turkey, onion and garlic powder, chili powder, paprika, no salt seasoning and pepper. Brown the ground turkey, while breaking it up. Add lime juice and zest. Divide turkey mixture amongsy the tortillas. Top each one with some of the cantaloupe salsa and yogurt or sour cream, if using. Serve immediately.
