Egg and Bacon Salad Wraps

  • 12 hard-boiled eggs, peeled and finely chopped0
  • 1/2 cup mayonnaise
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon prepared horseradish
(optional)
  • 1/4 red onion, diced
  • 3 slices bacon, cooked and crumbled
  • 1/4 cup parsley, chopped
  • 4 large flour tortillas
  • Lettuce leaves for wraps, any kind
  • Salt and Pepper, to taste

In medium bowl, combine the first 7 ingredients with salt and pepper, to taste. On the tortillas, place some of the lettuce on each. Divide the egg salad amongst each tortilla. Roll up like a burrito, cut in half. Serve immediately.
