- 1 tablespoon olive oil
- 1/2 large white onion, diced
- 1/2 green bell pepper, diced
- 3 garlic cloves, minced
- 1 lb. ground beef
- 1 can (14.5 oz.) tomato puree
- 2 tablespoons yellow mustard
- 3 tablespoons ketchup
- 2 teaspoons brown sugar
- 1 tablespoon apple cider vinegar
- 20 rolls, split
- 2 cups Colby Jack cheese, shredded
- Salt and Pepper, to taste
Preheat oven to 350 degrees F.
In a large skillet, heat oil over medium heat. Saute onion, pepper and garlic with salt and pepper, stirring occasionally, for 5-6 minutes.
Add beef; cook for 4 to 5 minutes or until browned. Add tomato puree, mustard, ketchup, brown sugar, and vinegar. Cook, stirring occasionally, until slightly thickened, 8 to 10 minutes. Place split rolls on a large baking sheet/s. Divide cheese amongst each roll. Bake for 4-6 minutes or until cheese melts. Serve Sloppy Joe beef mixture on the rolls.
