Watermelon and Brie Bites with Balsamic Glaze (05.23.16)

  • 1 cup balsamic vinegar
  • 2 tablespoons sugar
  • 1/4 whole watermelon, cut into 1/4’ thick squares (24 squares)
  • 8 oz. brie cheese, cut into 1/4’ thick squares (24 squares)
  • 10-12 mint or basil leaves
  • toothpicks (optional)
  • Salt, to taste

Bring vinegar to a boil in a small heavy saucepan; reduce to a simmer. Cook for 12-15 minutes or until the mixture is thickened. Remove from heat; add sugar and a pinch of salt. Let cool.

Stack a piece of watermelon, then a piece of brie and a torn piece of mint or basil. Secure with a toothpick, if using. Drizzle balsamic glaze over the top. Serve immediately.
