- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 lb. ground beef
- 2 large eggs
- 3 garlic cloves, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 cup parmesan cheese, grated, divided
- Cooking spray
- 1 tablespoon canola oil
- 1/4 onion, chopped
- 1 1/2 cups marinara sauce
- 12 rolls, split, toasted
- 12 fresh basil leaves (optional)
- Salt and Pepper, to taste
Preheat broiler to high.
In a large bowl, combine the breadcrumbs and milk. Add beef, eggs, garlic, onion powder, oregano, basil, half of the parmesan cheese, salt an pepper. Gently combine the ingredients. Divide beef mixture into 12 (golf ball size) meatballs.
Arrange meatballs on a broiler pan coated with cooking spray; broil 3 minutes or until browned. Turn meatballs over; broil 2-3 minutes or until desired degree of doneness.
In a small saucepan up to medium-high heat, add oil Saute the onion for 3-4 minutes with salt and pepper. Add marinara sauce. Cook for 3-4 minutes.
To serve, top each toasted roll with some of the marinara mixture, one meatball, some of the remaining parmesan cheese and a basil leaf, if using. Serve immediately.
