Caramelized Banana Pudding

  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup butter
  • 1/4 teaspoon ground cinnamon
  • 4 large ripe bananas, sliced
  • 2 cups cold milk
  • 1 (3.4 oz.) box instant vanilla pudding
  • 24 vanilla wafers

In a large skillet over medium heat, stirring constantly, add the first 3 ingredients. Cook 2 to 3 minutes or until bubbly. Add bananas; cook an additional 2 to 3 minutes. Remove from heat.

Whisk the milk and pudding in a medium bowl for 2 minutes. Divide the banana mixture, pudding and wafers among in 6-8 medium clear glasses by layering each of the ingredients in the glasses. Serve immediately.
