- 2 cups boneless, skinless chicken breasts, diced or shredded
- 1/4 cup dried cranberries
- 1/4 cup almonds, chopped, toasted
- 1 cup celery, chopped
- 1/2 large bell pepper, any color chopped
- 3 green onions, chopped
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 cup red seedless grapes, chopped
- 3 large avocados, cut in half, seed removed
- Salt and Pepper, to taste
In a medium bowl, mix together the first 8 ingredients through red seedless grapes, if using, with salt and pepper. Cut some of the avocado out of each half to allow more room for chicken salad. Chop removed avocado and add to salad. Divide chicken salad amongst each avocado half.]
