Mushroom turkey burgers
Recipe: Intermountain Medical Center My Heart Challenge
- 1 lb. ground turkey
- 2 tablespoons yellow mustard
- 2 tablespoons white onion, minced
- 2 tablespoons natural ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1⁄4 teaspoon paprika
- 1⁄2 cup whole grain breadcrumbs
- 2 egg whites
- 1 tablespoon canola oil
- 1 tablespoon olive oil
- 3 cups white mushrooms, sliced
- 1/2 large onion, any kind, thinly sliced
- 4 whole grain hamburger buns, toasted (optional)
- 4 tablespoons Dijon mustard
- 4 tomato slices
- No Salt Seasoning and Pepper, to taste
Combine the first 9 ingredients, through egg whites, in a bowl with no salt seasoning and pepper. Form into 4 patties. In a large skillet with canola oil up to a medium-high heat or greased grill, cook patties to desired doneness.
In a frying pan up to medium heat, add olive oil. Saute mushrooms and onions for 8-10 minutes, frequently stirring and until golden brown. To serve, brush Dijon mustard on each bun, if using, add a turkey burger, tomato slice, sautéed mushrooms and onions. These can also be served on a plate without a bun with all of the ingredients. Serve immediately.
