Corned Beef Hash (03.18.16)

  • 1 to 2 cup cooked diced corned beef
  • 2 cups boiled potatoes diced
  • 1 large onion diced
  • 1 tsp finely chopped garlic
  • 4 Tbsp butter
  • Salt and pepper
  • 4 poached eggs

Dice the top three ingredients the same size and add the chopped garlic.
Sauté the corned beef / potatoes / onions and garlic in the butter in fry pan adjust salt and pepper.

Place in serving bowl and top with a cooked egg – poached is traditional

Garnish with chopped parsley
