Steak Tacos with Pineapple Salsa (03.01.16)
- 1/2 lb Boneless Steak
- 2 oz Blue Cheese Crumbles
- 5 Flour Tortillas
- 1/4 C. Greek Yogurt or Sour Cream
- 1 C. Pineapple Chunks
- 1 Lime, zest and juice
- 1/2 Jalapeno (optional)
- 1/4 C. Cilantro, chopped
- Tomatoes, chopped (optional)
Preheat oven to 400 degrees.
Season the steak with salt and pepper. Cook in an oiled skillet brought up to medium high heat to desired doneness. Let rest for 5 minutes on a cutting board. Cut into thin strips.
Place the tortillas on a baking sheet. Divide the blue cheese amongst the tortillas. Bake 3-4 minutes or until cheese melts and tortillas have softened.
For the salsa, mix all ingredients together in a bowl with salt and pepper. To assemble, place some of the steak strips on each tortilla. Top with salsa and Greek yogurt or sour cream. Add tomatoes, if using. Serve immediately.
