Taco Turkey Skillet (01.27.16)

  • 1 lb. lean ground turkey
  • 1/2 medium onion, any kind, diced
  • 1/2 green bell pepper, chopped
  • 1/2 jalapeno or Serrano pepper, diced (optional)
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 2 cup corn
  • 2 cups whole grain rice, cooked
  • 2 cups prepared salsa
  • 1/2 cup non-fat sour cream or plain yogurt (optional)
  • 3 green onions, chopped
  • 1/4 cup cilantro, chopped
  • No Salt Seasoning and Pepper, to taste

In a large skillet over medium-high heat, sauté the turkey, onion, bell pepper and jalapeno or Serrano, if using with no salt seasoning and pepper for 6-8 minutes. Stir in chili powder, cumin, corn, rice, salsa and sour cream on yogurt, if using. Bring to a boil; reduce to a simmer for 5 minutes. Serve with green onions and cilantro garnish.
