Recipe: Healthy Pumpkin Overnight Oats

Celebrate National Pumpkin Day with a recipe that won't make you feel guilty. Make your breakfast the night before for something delicious and easy in the morning. Kayla Womeldorff, a registered dietitian at Harmons, shows us how to make Healthy Pumpkin Overnight Oats.

Pumpkin Spice Overnight Oats

Adapted from siggi’s dairy


1/3 cup old fashioned oats

1/3 cup low fat milk

1/3 cup siggi’s 0% plain or vanilla yogurt

¼ cup pure pumpkin puree

½ tsp vanilla extract

Cinnamon and nutmeg, to taste

½ tsp maple syrup


Combine all ingredients in a container and mix well. Cover and store until the oats have absorbed the liquid, at least four hours or overnight.
