Tex Mex Stuffed Avocados (09.10.15)

  • 1/2 cup fresh or thawed frozen corn, drained
  • 2/3 cup black beans, rinsed, drained
 (optional)
  • 1 large carrot, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup prepared chunky salsa
  • 2 green onions, thinly sliced
  • 1/2 jalapeno, diced (optional)
  • 2 large avocados, cut in half and seeded
  • 1/4 cup tortilla chips, crushed
  • Salt and Pepper, to taste

In a bowl, combine corn, beans, carrots, cilantro, salsa, green onion, jalapeno, if using, salt and pepper; stir together. Fill each avocado shell with 1/4 of the mixture. Divide tortilla chips amongst the 4 and top each avocado. Serve immediately.
