Game Day Recipe: Guacamole with Roasted Corn (09.03.15)

  • 1 ear of fresh corn removed from husk
  • 4 ripe, Fresh Avocados, seeded, peeled, cut in chunks
  • 1 Tbsp. lemon juice
  • 1/2 small sweet white onion, minced
  • 1 ripe Roma tomato, seeded and diced
  • ½ small red onion diced
  • Salt and pepper, to taste


Mash avocados with lemon juice in a bowl, leaving some chunks.

Roast corn in oven at 400 degrees till charred looking

.Gently stir in remaining ingredients and serve with tortilla chips or any type of flat bread
