Peaches & Cream Cake
Bake your choice of cake: vanilla or spice
Peach cake filling:
2 Tablespoons butter
1/2 cup sugar
1/4 cup brown sugar
1 Tablespoon lemon juice
3 Tablespoons flour
1/2 teaspoon cinnamon
1/8 teaspoon salt
3 cups fresh peaches, peeled and diced
1/4 teaspoon almond extract
Pour lemon juice over diced peaches and stir to coat. Melt butter and sugars over medium heat until combined. Pour in peach mixture and bring to a simmer for 4 minutes. Add dry ingredients and let simmer until flour is dissolved and mixture thickens. Remove from heat. Add almond extract.
Frost cake or garnish with whipped cream and sliced fresh peaches.
