Peach, Orange and Avocado Salad (08.20.15)

 avocados, diced
  • 2 peaches, cut into bite size pieces
  • 2 oranges, cut into bite size pieces
  • 1/4
red onion, diced
  • 2
tablespoons coconut flakes
  • 2
tablespoons balsamic vinegar
  • 1/4
cup orange juice
  • 2 teaspoons sugar
  • 1/4 cup plain yogurt
  • Salt and Pepper, to taste

In a large serving bowl, add the first five ingredients. In a small bowl, mix together the vinegar, juice, sugar, yogurt, salt and pepper. Pour into the large bowl. Gently toss. For the best flavor, cover and refrigerate for at least 2 hours.
