Recipe: Smoked Corn Salad

Smoked Corn Salad (Serves 4)

2 Ears of Corn
1 Jalapeno
1 Large Tomato
1 Large Purple Onion
4 Strips of Bacon
2 T Ranch

Smoke Corn:
Keeping corn in the husks, soak in water for 1 hour
Turn BBQ on Low (about 250 degrees) and add smoke chips
Smoke corn (still in husks) for 1 hour
Remove corn from husk, cut corn off the cob and refrigerate until cool
Wash 1 Jalapeno
Coat Jalapeno with Olive Oil, Garlic, Salt and Pepper
Roast until black on the outside
Place in Ziploc bag to steam for about 20 minutes
Peel, Remove Seeds, and Dice
Cut 4 Strips of Bacon into 1 in. Pieces
Sauté until crispy

Cut 1 Large Onion into Long Strips
Mix above ingredients with 2 T of Ranch
