Barbecue Sauce (07.02.15)

Makes 4 1/4 cups

Ingredients:

  • 6 1/4 cups diced tomatoes
  • 1 cup ketchup1 tablespoon Cajun spice
  • 1 tablespoon chile powder
  • 1/4 cup Dijon mustard
  • 1 1/2 teaspoons minced garlic
  • 1/8 cup minced fresh oregano
  • 1 teaspoon dried cumin
  • 1 1/2 tablespoons minced jalapeno chiles, stemmed and seeded
  • 1 1/2 cups chopped onion
  • 1 1/8 cups brown sugar
  • 3/4 cup red wine vinegar
  • 6 tablespoons molasses
  • 6 tablespoons Worcestershire sauce
  • 1 1/2 cups water
  • 1 1/2 teaspoons liquid barbecue smoke, optional

Instructions:

In a large, heavy bottomed pot over medium heat, add all the ingredients and bring to a boil, stirring frequently. Reduce to a simmer. Simmer for 1 hour, stirring occasionally, to keep the sugars in the sauce from sticking and burning.
