Spring Seafood Cobb Salad (03.20.15)

Serves 4

Wash / Dry  and Cut all ingredients into approximately ½” dice:

  • 1 head romaine lettuce
  • 1 head butter lettuce
  • ½ head iceberg lettuce
  • 2 handfuls Field mix

On top of the lettuce above put rows for presentation, of the following ingredients ½ inch dice

One cup each:

  • Fresh bacon bits
  • Blue or feta cheese
  • Tomatoes
  • Avocado
  • Green onions
  • Hardboiled egg
  • Cucumber
  • Green peas
  • Broccoli mini florets

 Add to the top:

  • 2 C cooked shrimp
  • 1 C Crab meat
  • ½ C  bay scallops
  • ½ C Languistino Lobster

Creamy Cocktail sauce

  • 1 C Chili sauce
  • 1T Horseradish (FRESH or prepared)
  • 2C Mayonnaise
  • Juice of one FRESH lemon and lime
  • Dash of Garilic powder
  • Dash of onion powder
  • Dash of Salt
  • Dash of Pepper

Toss all ingredients together just before you are ready to eat, coat with dressing to your personal liking.
