Lime Sesame Chicken Salad (02.23.15)

  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 1 teaspoon toasted sesame oil
  • 1/2 small Serrano chili, diced
  • 1 small head romaine lettuce, chopped
  • 2 carrots, chopped
  • 1 cup corn kernels
  • 1/2 lb. skinless chicken breasts, cooked, shredded
  • 1 tablespoon toasted sesame seeds
  • 1 cup rice noodles
  • 1/4 cup fresh cilantro leaves, torn or chopped
  • Salt and Pepper, to taste

Whisk together the oil, lime juice, honey, sesame oil, chili salt and pepper in a large bowl. Add the lettuce, carrots, corn and chicken; toss well. Top with sesame seeds, rice noodles and cilantro.
