Baked Salmon Teriyaki Party Platter (12.17.14)

  • non-stick cooking spray
  • 2 lbs. fresh salmon fillets
  • 1 cup SEAL SAMA teriyaki sauce
  • 1 package crackers, any kind
  • 2 lemons, for serving
  • Parsley, for serving

Preheat oven to 350 degrees.

Cover 13×9 baking dish or cookie sheet with aluminum foil. If you are using a cookie sheet, make a little lip with the foil around the outside edges to prevent spill-over. Spray the foil with the non-stick cooking spray.

Place salmon fillet skin side down, and pour teriyaki sauce over the top. Spread the teriyaki sauce over the entire topside of the salmon. Place another piece of foil loosely over the top of the salmon, and bake for 10 minutes. Remove top foil and continue baking for another 10 minutes until you can see meat just starting to split.

Take out of the oven and let cool down. Using two spatulas, loosen salmon from both sides, then lift off of the foil and transfer salmon to your platter.

Decorate with parsley and lemon wedges. Serve cold with crackers as a great party buffet.
