Citrus Turkey Ciabatta Sandwiches (11.28.14)

  • 2 garlic cloves, pressed
  • 1/2 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 4 ciabatta rolls, cut in half
  • 8 slices Gruyere cheese
  • 1/2 lb. cooked turkey, sliced
  • 4 large tomato slices
  • 1/2 cup baby greens, loosely packed
  • 1/2 cup Cranberry Orange Relish
  • Salt, to taste

Combine the first 4 ingredients in a small bowl; add salt to taste. Place 2 of the pieces of cheese inside each roll. Toast till the cheese melts. Brush the mayonnaise mixture on the inside of the other half each ciabatta roll. Top with turkey, tomato slice, baby greens and some of the Cranberry Orange Relish. Cut in half; serve immediately.
