  • 1 ½ lbs. ground beef
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 4 slices cheddar cheese
  • 3 Anaheim peppers
  • 2 cups tomatoes, diced
  • 1 garlic clove, minced
  • 1/8 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1/4 cup cilantro, minced
  • 1 lime, juice only
  • 4 tablespoons mayonnaise
  • 4 large hamburger buns, halved, toasted
  • Salt and Pepper, to taste

Preheat oven or grill to 400 degrees,

In a large bowl, combine the beef, onion powder, garlic powder, chili powder, salt and pepper. Do not over mix. Form into 4 patties. Cook on an oiled grill or frying pan to desired doneness. Add the cheese slices on the burgers the last 5 minutes of cooking to melt.

Coat peppers with olive oil and place in oven or on grill until skin has turned brown.

Remove from oven or grill, place in a shallow dish and cover for 10–15 min, peel skin from pepper and dice. Add the next 6 ingredients through lime juice; combine well. Add salt and pepper to taste.

To plate, place some of the mayonnaise on each inside half of the buns. Add a burger to each, top with some of the green pepper salsa. Serve immediately.
